Storia

Questo storico punto di ristoro, nasce nei primi anni del Novecento. Nel corso del tempo ha cambiato più volte faccia e caratteristica. Nel 1976 viene acquistato dalla famiglia Negri avendo come attività la vendita di alimentari e prodotti nostrani, la vendita del pane nero di Coimo, il bar con uso cucina e la tabaccheria.

Solo nel 1993 con l’avvento di Negri Santina, chef diplomato alla scuola Formont ossolana, il locale prenderà la strada che tuttora segue affiancando alla vendita di prodotti ossolani quali formaggi nostrani, carni salate e salumi, l’attività di ristorazione.

Filosofia

L’Osteria del Pulverun con lo chef Negri Santina insegue tutto quello che è cucina della tradizione. Un piatto tradizionale esiste solo se preparato con materie prime che rappresentano l’eccellenza del nostro territorio. Quindi è con questo criterio che ciò che viene venduto all’alimentari del Pulverun e ciò che viene gustato all’Osteria del Pulverun proviene dalle capacità di Santina, nella scelta di contadini, allevatori e viticoltori dalle produzioni straordinarie.

La scelta di sostenere produttori ossolani proviene dalla visione e convinzione di raggiungere obiettivi definiti : far del bene al territorio creando un cambiamento della quotidianità nella vita di chi hai vicino. Il secondo obiettivo è riuscire a ricreare piatti tradizionali con sapori radicati nel territorio; una pasta e bajan con nostrano ossolano e bajan di masera ha gli stessi sapori della cucina dei nostri nonni.

I piatti della tradizione ossolana che potrete gustare all’Osteria del Pulverun non vi lasceranno insensibili. La sapidità, la purezza dei prodotti mai tradiranno le vostre aspettative. È il trionfo della semplicità nella creazione e della qualità nella materia prima.

Pasta e bajan, gnocchi ossolani, polenta di Beura, e ancora, ravioli alle ortiche (in stagione), brasati, involtini di verze, trippa e baccalà vi faranno apprezzare ancora quell’atmosfera casalinga di una volta.

Cantina

Nell’Seicento l’Ossola era una culla di terrazzamenti e vigneti. L’Ottocento porta con sé la rivoluzione industriale e ciò che centinaia d’anni di coltivazioni e cultura del vino avevano creato, viene dimenticato per posti di lavoro sicuri e reddito fisso. Solo da qualche decennio appassionati e tecnici del settore hanno ripreso a coltivare le zone e i terrazzamenti migliori dove la storia (testi del Seicento) ricorda ottimi vini.

A Crodo la Scuola Agraria ricerca e produce vini bianchi di alta qualità. A Tappia, a Oira, a Trontano si produce ottimo Nebbiolo, Merlot e Prunent. Tutto ciò può essere degustato e acquistato nella cantina del Pulverun parlandone e discutendone con i gestori.

    Between Italy and Switzerland, following the “painters’ path

        

    The trip starts with a slow and magical train ride which crosses Val Vigezzo, a poetic valley famous for its artists, chimney sweeps. adventurers.......everywhere it is possible to find traces of ancient trades in this most northern piece of Italian territory nestling, as it were, in neighbouring Switzerland.
     

    Excursions from Domodossola to Santa Maria Maggiore are aboard the “Vigezzina”, the historical panoramic electric train travelling to and from Italy and Switzerland linking Domodossola with Locarno.
    A visit to the Rio Graglia mills in the village of Trontano. In the past these mills were used to grind rye, the main ingredient for the production of the typical brown bread.
    A visit to Santa Maria Maggiore, the main village in Val Vigezzo, which is also known as the painters’ valley. In fact, it hosts the “Rossetti Valentini” art school where one can admire the works of art by artists inspired by the beauty of the valley. The Chimney Sweep Museum is also to be found here. It is a reminder of the hard life of the young village-dwellers who went abroad to try to earn a living by practising their trade.

    D for Domodossola, a town in the centre of a valley

        

    A visit to the heart of Domodossola and its medieval history, the town’s and people’s meeting square. It is a town that people pass through to get elsewhere. It is near the Italian Swiss border. It is a centre where different nationalities meet, where there are traditions of a whole valley, a valley where historic spots are to be found and enjoyed.

    Departure from Vagna towards Calvario. A visit to its gardens and holy exhibits. Having come down to Domodossola, the heart of the town, the main square can be seen and admired with its houses built in the 15th and 16th centuries. There is Via Briona with the bishop’s house also dating back to the 15th/16th centuries and the Briona Tower. A little further on, one can visit the church dedicated to Saints Gervasio and Protasio with frescoes, sculptures in high relief and paintings inside. The museum in Palazzo Silva is also worth visiting and Palazzo Silva itself is of the 16th century and let’s not forget the “Galletti” foundation inside the “Palazzo di San Francesco”. When walking up the Mattarella hill we reach “Sacro Monte Calvario”, a natural regional park, a sanctuary with its Novitiate and its Centre of Spirituality. Just a little lower we can admire the “Madonna delle Grazie” (Our Lady of Grace) Oratory with frescoes, stucco work and statues inside and while going a little further down the road we reach the church of Saints Quirico and Giulitta with frescoes dating back to the 14th and 15th centuries.

    A short walk along the high up path of presses and mills, among paths of prayer and history
     

        

    From Sacred Monte Calvario to Tappia and Anzuno in order to discover what religious and peasants’ lives were like while going along paths of faith, presses, mills and old furnaces and ovens.
    A beautiful, panoramic path looking down onto the entire “Bassa Ossola”, a taste of ancient life, of slow movements, of nature, of man’s work, of a chance to get away from chaos.

    Departure from Domodossola by mini bus in order to reach Sacro Monte Calvario, a Unesco heritage, to visit its mystic and religious aspects.
    Departure for the small village of Anzuno from where one can admire a splendid panorama over Val d’Ossola. The route is along the “high path” (now known as the Way of the presses and mills) passing through the high hamlets between Domodossola and Villadossola.
    So after passing through the hamlet with its press, school and oven we reach the valley of Rio Anzuno where one can visit the mills and the old quarry from which the soapstone of lava rock was extracted. Once past the Cappella dell’Oro (Chapel of Gold) we go around the edge of the Tappia cemetery to get to the church dedicated to Saint Zeno.
    From the church square we enter the old hamlet of Tappia with its characteristic examples of traditional architecture, fountains, an old oven and a press.
    The coach will be waiting for us at Tappia for the return
    journey to Domodossola.
    Visit e wine tasting in Zaretti’s Tappia Wine Cellars.

    Oira, the garden of Ossola

        

    A route in an area rich in history, architecture, culture and natural beauty. An area where you will walk among typical houses, old furnaces ,the aroma of wine, wash houses and wine cellars.
    From up high one can look down on Ossola. If you are fond of wine this is the outing for you.
     

    An excursion to Oira with a visit and tasting of wine at the wine cellar Cà d’Matè’
    Departure is from Solaro towards the village of Oira.
    Starting from the centre of Oira, from the parking place in Via Val Formazza, one can reach the church of Saint Mattia in the middle village and also Saint Sabastian Oratory and the ancient square. The walk continues to the lower village, the village of Canova which is of great architectonic interest and where there is an old oven, which has recently been restored.
    It has been pointed out that the route of the ancient Via Francisca is under the mule track leading to Preglia
    The walk continues in La Gera, a locality where there is the Cappella della Madonna della Gera (Chapel of Our Lady of La Gera). Inside there are the grave stones of fallen soldiers. Not far away there is the cemetery and the monument of the band player.
    Returning to the main road one can admire the ancient ice-house. Then we follow the mule track to the mill and to the Riale (brook) Tapin where there are drinking troughs and washing houses along its way. Going up we reach the ancient village of “Villa Superiore”. On the way down you can see the equipment of the new dairy.
    In the Village in the middle there is the ancient dairy and the refining cellars. Wine tasting in Garrone’s Wine Cellars.
